Behind the Cheesecake, Wine, and Gourmet

Brian Torres
Born and raised in Brooklyn, New York, Brian is the man responsible for the Best Cheesecake south of the Mason-Dixon Line. Brian fell in love with food early. Starting his food industry at a tender age of seven, his first job was for a local neighbor gourmet deli. During this time, Brian took the time to create his cheesecake recipe. With help from his mother with a basic cheesecake recipe, he modified and altered the recipe until it was his own version of the dessert.

After high school, Brian enrolled at Susquehanna University to pursue a Bachelor’s degree in Business Marketing. Using his education he moved to Charleston, South Carolina where he found work focusing in fine dining. Not stopping there, in 2000 he moved to Puerto Banus, Spain where he was put to the test helping four business partners, as a consultant, improve their restaurant. Within a few months, he helped them open two more restaurants.

In 2001, Brian became a father with the birth of his daughter, Lucia. Later that year he moved back to the States landing in Savannah, Georgia as the Wine Director & Assistant Manager for Sapphire Grill. Being in one of the city’s most desirable and eclectic restaurants gaining him respect along with a large local following.

In 2006, Brian helped design and open up the restaurant Eos on Habersham Street. Months later, Brian and his business partners looked to expand by opening a second restaurant, Sol. With success, he partnered up with Claude Auerbach in late 2009 to design and start up a new project, Sugar Daddy’s. The food selection along with the beer, wine, and liquor lists were designed to take on some of the best menus in town.

His most recent adventure which started in 2010, while partnering with Claude Auerbach and James Kleinschmidt, has been the opening of FORM. Form is a gourmet Shoppe focusing on his Cheesecake, wine, and an extensive cheese collection from around the world. In addition to the bohemian atmosphere, extensive Wine Dinners are offered throughout the year, allowing him to bring all his past experiences together under one roof.
Claude Auerbach
Raised by a French mother and German father who provided Claude with a significant amount of cultural exposure through travel; allowed him to explore the majority of Europe by the age 14.
Years later, he would enroll in Johnson and Wales University in Providence, Rhode Island. This is where Claude would pursue degrees in Culinary, Hospitality, and Foodservice Management. With this solid foundation food and beverage, Claude would go on to work at The Hotel DuPont in Wilmington, Deleware, The University & Whist Club in Wilmington, Deleware, The Four Seasons Resort in Maui, Hawaii, and then later in Chicago, Illinois.
Claude's first venture into the wine business came with Judge & Dolph in Illinois and then later with WJ Deutsch & Sons LTD as a wine representative and sales manager.
In 2003, he relocated to Bluffton, South Carolina where he opened up Wines ETC. After a successful first year, Claude was able to expand into liquor sales with the addition of Liquors Too right next door. In October 2009, the businesses were unfortunately closed down. With reservations of opening his own store again, Claude relocated to Savannah, Georgia where he was hired on as Bar Manager with Brian Torres at Sugar Daddy's.
After a short stint back in the restaurant business, Claude with help of his business partners Brian and James Kleinschmidt, was able to open FORM. To the addition of wine, he was able to expand into another passion, gourmet cheese and meats.
Claude's passion for food and wine is something he hopes to share with everyone that comes into the store. With a vast selection from all over the world, he wants to educate customers with a value driven selection.
James Kleinschmidt
Being the youngest in the crew, James brings a fresh energy to this group of owners. Being raised around restaurants, James has experienced all the different kinds of trials one may face in the food industry. From dishboy to operating manager, James has been looking for the next step in his career.
Moving down to Savannah in late 2006, James previously attended SCAD. Upon meeting Brian and Claude, he has joined them in this joint venture to bring the city the best service possible. The desire he has to learn makes him a valuable asset to the crew.

Company History

FORM was established in late 2010. Our goal was to bring the city of Savannah something new and of better quality to the area. With a over 90 years of combined service industry experience the partners bring expertise in both food and wine. We are able to bring our customers a variety of services, including on- and off-site caterings, suggestions on food and wine pairings, and professional restaurant consulting. Our passion for food and wine is growing with everyday and We are looking to share our knowledge and expertise with whomever comes in.
